Starting Her Career

When the worker bee reaches 18 to 20 days She seeks out nectar, which is converted into honey being their carbohydrate, pollen which is the protein used to feed the larvae and their young sisters, and water which is essential for the honey production and to hydrate the bees, and propolis, the medicinal element to disinfect the hive and for health purposes including the ‘cement’ to repair the hive.

Honey Stomach

When she lands on a plant containing nectar, she sucks it up with her tongue which gets stored in a sac (“honey stomach”) in her body. Immediately the nectar in the sac is broken down into simple sugar from the enzymes in her saliva. This can be seen at the hive entrance when she returns by their rounded and slightly bent abdomen.

The Ripening

This is then transferred to the younger bees. Excess nectar is regurgitated, and small amounts are deposited into the cells of the comb. The water in the nectar is then evaporated caused by the house bees fanning the comb with their wings creating air currents that dry out the unripe honey until the correct water moisture is achieved.

When the cells are full of this ripe honey, the newborn bees cap the cells with a thin layer of wax. Once capped, the honey will not go off or ferment.

Honey Composition: Shelf life – Forever

The sweetness comes from the monosaccharide’s, fructose, and glucose, and is as sweet as granulated sugar. The distinctive honey flavour is often preferred for baking over sugar and sweeteners. Keep honey in a cool location away from direct sunlight and in a tightly sealed container.

It is recommended that you use the original container the honey came in, though any glass jar or food-safe plastic container will work. Avoid storing honey in metal because it can oxidize.
